The ingredients needed to make Cinnamon Rolls:
  1. Prepare dough
  2. Prepare dried active yeast
  3. Make ready butter, melted
  4. Make ready large egg
  5. Prepare whole milk
  6. Take plain flour

  9. Take water
  10. Make ready filling
  11. Make ready brown sugar
  12. Take ground cinnamon

Steps to make Cinnamon Rolls:
  1. Dissolve the yeast in the water with one teaspoon of sugar whisk together and leave for 5-10 minutes.
  2. To make the dough whisk together the flour, salt and sugar
  3. Combine the milk and butter in a microwave proof bowl and heat for 30 seconds or until the butter has melted, allow to cool to warm (can also be heated in a saucepan).
  4. Pour the milk butter into the dry ingredients and add the egg. Mix until just combined.
  5. Add the the yeast water to the mixture and stir until it forms a soft dough. Add a sprinkle of flour if the dough is too wet and stir again.
  6. On a clean and floured surface, knead the dough for 2-3 minutes.
  7. Place the dough in a greased bowl and cover with clingfilm and let it rest for an hour.
  8. In a small bowl mix together the cinnamon and sugar. Set aside.
  9. Roll the dough on a floured surface to 35cm by 20cm approximately.
  10. Spread the butter over the dough. Then sprinkle with the cinnamon sugar.
  11. Roll the dough as tightly as you can and cut into 12-14 even rolls.
  12. Grease a 20cm by 20cm tray approximately and place the rolls in the tray.
  13. Tightly cover the tray with clingfilm and allow to proof for 90 minutes in a warm place.
  14. Once the rolls have doubled in size preheat oven to 190c and bake for around 25 minutes-30 minutes. If the top is getting browned too quickly cover loosely with foil.
  15. While it's baking make the icing. Whisk together the icing sugar, vanilla and expresso. Set aside.
  16. Once the rolls are cooked, remove them from the oven and drizzle with the icing.
