Make sure to use a durum wheat semolina, a very refined flour (usually imported directly from Italy) or your pasta won't stay firm and "al dente" during the cooking process. Instructions to make Farfalle (bow tie) pasta:
  1. Mix semolina and AP flour. Make a well in the middle and pour your eggs in it. Sprinkle salt on the eggs.
  2. Mix everything, knead until elastic and smooth. Add flour if dough is sticky.
  3. Cover with plastic wrap for 30 minutes.
  4. Divide dough into sections. Roll each section at a time very thinly on a floured surface. Most of mine were thicker than they should've been.
  5. Use a zigzag cutter and cut into mini rectangles. Smaller than mine.
  6. Pinch the middle of the rectangles & bring the 2 opposite sides in contact with one another.
  7. Repeat for all the dough. Allow to dry.
  8. Cook for 3-5 minutes in salted boiling water.

There is also a ridged version known as farfalle rigate. Farfalle Pasta With Zucchini, Mint, and Almonds. For this recipe I used mini Farfalle pasta for several reasons: These mini bow ties look great (they are super cute and you just want to pop them in your mouth); They're easy to manipulate onto a fork, with other awesome ingredients from this salad; & They cook faster. Farfalle pasta gets its name from the Italian word for butterfly – and with good reason. The pasta has a shape that's similar to butterfly wings or small bow ties, which is why it's often called bow tie pasta.
