The ingredients needed to make Pork sausage roll:
  1. Take Meat seasoning:
  2. Make ready 1 tablespoon vegetable oil, sauté the onions
  3. Take 1 brown onion, chopped
  4. Get 6 pork sausages (Heck 97% pork or any of choice)
  5. Prepare 1 tablespoon mustard (I use Thomy German mustard, similar to Dijon)
  6. Make ready 2 tablespoons Worcestershire Sauce
  7. Make ready 2 tablespoons, chopped parsley fresh or dry
  8. Get 1/2 teaspoon fresh thyme or dry
  9. Make ready 1 tablespoon dry tarragon
  10. Prepare 1 tablespoon dry sage
  11. Make ready 2 tablespoons, chopped chives fresh or dry (optional)
  12. Prepare 1/4 teaspoon nutmeg (optional)
  13. Make ready For the puff pastry:
  14. Prepare 1 roll of Jus-Rol's ready rolled Puff Pastry Sheet (or any brand)
  15. Make ready 1 egg, beaten (egg wash for pastry)
  16. Prepare 2 teaspoons water (added to beaten egg, optional)

  18. Prepare Poppy seeds (sprinkle over pastry)
  19. Get Sea salt (optional)

  21. Take 2 tablespoons mayonnaise
  22. Prepare 2 tablespoons Dijon mustard
Instructions to make Pork sausage roll:
  1. Preheat the oven to 200 degrees Celsius. In a small pan on medium to low heat, add vegetable oil and then the onions. Cook until onions become translucent and soft. Turn off heat and set aside to let it cool.
  2. Remove the sausages from their skins and place the meat in a large mixing bowl. Add the mustard, Worcestershire sauce, herbs, and nutmeg, (optional) and mix well. Then set aside.
  3. Open and roll out the puff pastry flat onto a large cutting board. Cut the pastry in half lengthways. Set aside one half of the pastry and cover with a clean kitchen towel. Place half of the sausage meat in the middle of the puff pastry lenghways.
  4. Fold the first side using the parchment paper into the middle. Brush the other half (unfolded) with egg wash (this ensures pastry sticks). Then fold the other half into the middle. Ensure that the pastry is glued down properly so the pastry doesn’t come apart during baking. Cut into 4 equal pieces and place on a baking tray. Tip: to make large rolls cut into two, for smaller cut into six peices.
  5. Repeat steps 3 - 4 for the remaining half of the puff pastry and meat.
  6. Egg wash top and sides of the pastry. Use scissors to make small incisions at the top of the pastry. This ensures steam comes out during baking.
  7. Lastly, sprinkle the poppy seeds over each of the sausage rolls. If using sea salt sprinkle over a tiny amount (optional, I didn’t add salt as my family prefer it less salty).
  8. Bake for 20 - 25 minutes until golden brown and crispy on top. Remove the sausage rolls from the oven. Then immediately and carefully transfer sausage rolls from baking tray onto a wire rack to avoid the bottoms getting soggy.
  9. For the dipping sauce, in a small bowl add mustard and mayo together and mix well.
  10. Serve and eat while hot or as a snack with the mustard and mayo dipping sauce.
