The ingredients needed to make Pumpkin Halwa:
  1. Get 2 cups grated yellow pumpkin
  2. Get 1/4 cup sugar
  3. Get 1/2 spoon sugar
  4. Make ready 1/4 cup milk
  5. Take Pinch saffron (optional)
  6. Make ready 1 tbs ghee
  7. Make ready as required Dry nuts as per your choice
Steps to make Pumpkin Halwa:
  1. Peel skin of pumpkin and finely grate it. Take a pan and saute the pumpkin for 2 min. Close the lid and cook for 5-7 mins, naturally pumpkin releases water so need not add extra water. If pumpkin is too dry, try to add only a tbs of water and make sure it's throughly cooked and no raw smell.
  2. Once pumpkin is cooked, add milk and wait untill milk is absorbed completely. Add sugar and cook for around 5 mins keeping lid closed. Finally add saffron mixed with 1 spoon of warm milk, sprinkle cardamom powder and 1 spoon of ghee and give a mix.
  3. Serve hot or chilled as per your taste buds.
  4. Note: You can also do with ash gourd. Make sure pumpkin is cleaned well and cook until raw smell leaves for good fragrance.
