Start by grating some monterey jack and some sharp cheddar cheese. What have I been doing with my life that I haven't had a blueberry breakfast quesadilla. Half quesadillas, bisected to show content. Another preparation involves cheese and other ingredients sandwiched between two flour tortillas, with the whole package grilled.

Steps to make Quesadillas (two versions):
  1. Mix onion, coriander, cheese and chilli over two large tortillas. Cover with second tortilla. Dry fry 2 mins per side, or 2 mins total in sandwich press. Cut each in to 8.
  2. For spring onion filling, serve with sour cream and sweet chilli dips
  3. To make salsa: evoo, mustard seeds and chilli in pan on medium-high heat until fragrant, add pineapple, juice and season with black pepper. Cook for 5 mins until thick and sticky, then add lime juice and serve.
  4. For red/yellow pepper/ capsicum filling, serve with sour cream and pineapple salsa

Half quesadillas, bisected to show content. Another preparation involves cheese and other ingredients sandwiched between two flour tortillas, with the whole package grilled. Wipe out the pan and return to medium heat. Put a plate on top of the quesadilla to flip it over onto the plate. Then slide the other side onto the skillet.
