The ingredients needed to make Chicken Gyros:
Take 500 g chicken thigh fillets (deboned)
Get 1 cup (250 ml) Greek or natural yoghurt
Make ready 25 ml lemon juice
Get 50 ml olive oil
Make ready 1/2 teaspoon cayenne pepper(less if you don’t want it too spicy)
Take 1 teaspoon ground cumin
Take 1 teaspoon ground coriander
Take 1/2 teaspoon ground cinnamon
Take 2-3 cloves crushed garlic
Take Salt and pepper to taste
Take 1 teaspoon paprika
Take Oven tray with 1/2 large onion and wooden skewer- this is the frame that supports the chicken thighs during cooking
Instructions to make Chicken Gyros:
Make the marinade by combining all ingredients except chicken, onion/skewer.
Add flattened chicken thighs - I used the palm of my hand to gently flatten so that all the pieces were about the same thickness
Marinade for a minimum of 2 -4 hours
Assemble marinated chicken thighs on the skewer - add at right angles to each other to even out the gyros stack.
Bake in oven at 200 degrees centigrade for 1 hour 20 minutes or until cooked through. The outside will get a little burnt but don’t worry - important to check the inside is cooked.
Remove from oven, cool slightly and then slice. Serve with salad and pita bread. A nice side dish is some yoghurt with mint (in winter I substitute a teaspoon of mint sauce from fresh mint).
