I really really didn't like this soup. I was really disappointed to because I am a fan of sauerkraut and meatballs and thought I would love it. Heat oil, saute onion until fragrant then add in flour an paprika, stir to combine. It is actually a very easy and simple soup to make, but tastes like you spent all day on it!

  2. Take 1 pound beef meatballs see my recipes
  3. Prepare 1/2 stick butter
  4. Get 1 pound potatoes

  6. Make ready 1 medium red onion
  7. Make ready 28 ounce can sauerkraut
  8. Make ready 1 quart mushroom broth
  9. Get 2 quarts beef broth
  10. Take 1/2 pound ziti rigati pasta
  11. Take 1/3 pound summer sausage
  12. Get Spices
  13. Get 1/2 teaspoon summer savory
  14. Make ready 1 teaspoon parsley
  15. Prepare To taste salt
  16. Make ready To taste ground black pepper
  17. Get To taste ground white pepper
  18. Make ready 5 whole juniper berries

It is another unique way to cook with sauerkraut. Tonight I am cooking this sauerkraut soup with. Pour remaining ingredients in a sauce pan. Test one meatball (I know this is hard- LOL) to make sure it's done.

Steps to make Sauerkraut, and Meatball Soup:
  1. Wash, peel, and slice the potatoes then cut into manageable pieces. Wash, peel, and slice the carrots. Slice the garlic. Peel the summer sausage slice as thick as the potatoes. Now quarter the sausage slices.
  2. Brown in a pot the meatballs in the butter. Set meatballs aside. Add potatoes, garlic, onions, and carrots and sauté in the butter and liquids in the pot that had the meatballs. Add in the mushroom broth, juniper berries, and spices. Chop the juniper berries.
  3. Drain and rinse the sauerkraut. Add to the pot the sauerkraut and pasta with the vegetables along with the meatballs.
  4. Add half the beef broth. After 15 minutes add the rest of the broth. Allow to cook covered for 30 minutes. Serve with bread I hope you enjoy!!!
