  1. Make ready 1 cup raw mango chopped
  2. Take 1/2 cup jaggery
  3. Prepare 2 tbsp oil
  4. Prepare 1 tsp coarse methi/ fenugreek powder
  5. Take 2 tsp red chilly powder
  6. Get 1/2 tsp mustard seeds
  7. Take 1/4 tsp hing
  8. Make ready 1/4 tsp turmeric
  9. Get 1/4 cup water
  10. Prepare to taste salt

METHOD: Wash, peel and cut the mangoes into half-inch pieces. Mix in the salt and turmeric and set aside for one hour in a stainless steel vessel. Squeeze out the water from the mango, add jaggery, and place the vessel on the fire. Raw mangoes are peeled and chopped into small pieces and then tempered with mustard, cumin and whole garam masala.

Steps to make KAIRAS/ RAW MANGO SWEET PICKLE:
  1. Heat a pan. Add oil, when heated add mustard seeds. Let them crackle
  2. Add hing, turmeric powder and the chopped raw mango. Cover and cook for 2 minutes.
  3. Add 1/2 cup of water and let it cook further until mango is soft.
  4. Add jaggery, red chilly powder, roasted methi powder and salt to taste. Cook this for another 2-3 minutes. Make sure the jaggery is dissolved.
  5. This is a tangy, delicious side dish that enhances your meals.

Squeeze out the water from the mango, add jaggery, and place the vessel on the fire. Raw mangoes are peeled and chopped into small pieces and then tempered with mustard, cumin and whole garam masala. Traditionally jaggary is added in this for sweetness but you can also use brown sugar or white sugar if jaggary is not available. The gravy or rasa of this pickle is quite watery ,don't.
