Get Half kg pumpkin
Prepare 4 tablespoons jaggery powder
Get 2 tablespoons ghee
Take 1/2 tsp cardamom powder
Get 2 tablespoons grated khoya (dried milk)
Get 2 tablespoons poppy seeds
Take 2-3 tablespoons finely chopped walnuts
Instructions to make Pumpkin Jaggery Halwa:
Peel pumpkin,remove seeds and cut into one inch size pieces. Put in pressure cooker along with only 4 to 5 tablespoons of water. Cook till two to three whistles. Cool down. Transfer to a bowl and mash it with the back of the spoon.
Heat ghee in a pan,when slightly hot, put cardamom powder,now put the mashed pumpkin and cook on medium flame till dry and it changes colour from yellow to light brown. It takes about 10 to 12 minutes. At any point in time if you feel pumpkin is sticking to the pan, you can put little more ghee. It should be glossy. When nicely brown and well cooked,put jaggery powder and cover and cook for two to three minutes on slow flame.
It is now when halwa will change its colour to dark brown due to jaggery. When all the liquid from jaggery dries,lastly add poppy seeds,walnuts and khoya (dried milk). Just mix well. Put off flame. Cover the pan and let it be there. The heat of the pan is enough for khoya,walnuts and poppy seeds to soften. After about ten minutes serve.
