  11. Make ready 1/4 cup chicken broth
  12. Get 1-1/2 tablespoons cornstarch
Steps to make Whole Buttery Bourbon Chicken:
  1. Preheat oven 350 degrees Fahrenheit
  2. Set the chicken out 25 minutes
  3. Get the salt ready just 1 tablespoon, I had to grind it.
  4. Sprinkle inside and out
  5. Now measure out the bourbon.
  6. Wash, peel, and chop the carrots. Add to the chicken along with the bourbon. Sprinkle the rest of the salt on the carrots.
  7. Bake in the oven covered for 2 hours.
  8. Melt the butter
  9. Measure the sugar
  10. Add the sugar and bourbon.
  11. Simmer till reduced by half.
  12. Pour the glaze over the chicken and put back into the oven uncovered for 30 minutes.
  13. After it has been in the oven take the chicken out of roaster. Heat the liquids and mix the cornstarch and chicken broth. Pour the cornstarch solution into the boiling liquids of chicken and stir till thickened.
  14. Add the carrots and chicken back into broth that you thickened. Baste the chicken with the liquids.
