  1. Get 1 lb ground beef
  2. Take 1 package taco seasoning
  3. Prepare 2 cups water
  4. Make ready 1 can (15 oz) diced tomatoes
  5. Make ready 1 can (15 oz) tomato sauce
  6. Make ready 1 can (15 oz) whole kernel corn
  7. Get 2 cups uncooked macaroni shells
  8. Make ready 1 bell pepper, chopped (my addition)
  9. Get Salt & Pepper
  10. Get Tortilla Chips (optional)
  11. Get Shredded Cheese (I used mild cheddar)

One pot pasta is an absolute busy weeknight game changer. Please do not cook the pasta before adding it in this recipe. Can I freeze this cheesy taco pasta? I often get asked about freezing one pot pastas, because they're so easy to make when you're pregnant and want to stock a few dinners.

Instructions to make One-Pot Cheesy Taco Pasta:
  1. Brown beef in a large quart pot over medium/ high heat. Drain fat and return beef to pot. (If adding bell pepper i sauteed it first then threw in beef to cook)
  2. Add taco seasoning, water, tomatoes, tomato sauce and corn. Bring to a boil. Below are the cans I used (+1 more of the tomato sauce)(the tomatoes were not spicy at all btw)
  3. Add uncooked macaroni and reduce heat to low. Cover and simmer for 10-15 minutes (until pasta is cooked through). Stir occasionally.
  4. Remove from heat. Sprinkle cheese on top and cover.
  5. Serve once cheese is melted! (Picture from video, prettier than mine lol) We ate with tortilla chips.
