  1. Begin by making a roux: fry garlic in oil. Then add flour to oil for few minutes. Stir thoroughly till cooked a little. Add milk gradually stirring each time. Continue till milk is used and creamy sauce is achieved.
  2. Add all the other ingredients as listed above. Adjust quantities to your liking, tasting as you go and simmering till you are happy.
  3. Dump in your cooked pasta and stir through on low heat till well combined. Should be creamy but saucey.
  4. Add in the raw egg. Stir through rather vigorously to combine. You can either serve immediately, or allow it to sit for a few minutes to allow pasta to absorb extra sauce and become stickier (I rather like it this way myself!)
  5. Serve up with plenty more black pepper, pamersan cheese and chilli sauce, if that's your liking.
  6. I had the keeps again the next day with an extra dousing of chilli sauce.
